<p>Ever since I was young, I always recognised my desire to go somewhere I’d never been. While most people dreaded packing, I would always get excited about it, viewing it as an exciting task that meant I was on my way to somewhere new.</p>



<p>I grew up in Mississippi, so the most traveling I did was to Florida for our annual family beach trip or to Houston to see my extended family for Christmas. My need to travel was ignited after I was lucky enough to spend five weeks studying abroad in Florence, Italy, with three weeks travelling around Europe after class concluded. The experience I had traveling abroad showed me a new life, and I haven’t been the same since. </p>



<p>When I travel, the most common question I get is, “oh, why are you going there?” and I’ve always been perplexed by the question, as if I need a reason to go somewhere other than just having the desire for new experiences.</p>



<p>In February 2018 I was sitting at work and had a random desire to go to the Caribbean. I tried to brush it off a bit, but I couldn’t stop thinking about it. I text one of my best friends and said, “Let’s… take a weekend trip to the Caribbean,” and she responded with, “I’m down!” </p>



<p>In April 2018, we went through with it and took our weekend trip to Belize&#8217;s smallest island, <a href="https://www.google.com/search?q=caye+caulker&amp;rlz=1C5CHFA_enUS884US884&amp;sxsrf=ALiCzsb8K6ovdGiJ_Tr0mOY6ZRdGXMMz6w:1670445498805&amp;source=lnms&amp;tbm=isch&amp;sa=X&amp;ved=2ahUKEwisqMq0ruj7AhXC7rsIHa4CBx0Q_AUoAXoECAIQAw&amp;biw=1260&amp;bih=571&amp;dpr=2" target="_blank" rel="noopener" title="">Caye Caulker</a>. In addition to the travel experience and overwhelming sights this trip brought me, it also gave me an epiphany that shaped the rest of my life. </p>

<p>When planning this trip at first, I had the reservations in my mind along the lines of, “well, we couldn’t <em>really</em> do that. This is Belize! It’s a different country. You don’t just go to Belize for the weekend because you feel like it.” For a while the thought seemed too far-fetched, but then we went and my eyes were opened up to the possibilities of travel. In getting my best friend to tag along and following through with the trip, I came to the realisation that we truly have the power to do whatever our hearts desire, whenever they desire it. This trip gave me a newfound freedom that I could go wherever I wanted, whenever I wanted. Since this trip, international travel has become my hobby and I&#8217;m living the best years of my life in London with plans to make it a permanent home.</p>

<p>Airline loyalty can be a great thing, but when you’re searching for the best deals, keeping your options open is the smartest tactic. My go-to search engine is <a href="https://www.google.com/travel/flights" target="_blank" rel="noopener" title="">Google Flights</a>, an incredibly useful tool designed by Google for smarter travel. My dad introduced me to this site in 2011, so I was definitely early to the game on cheap flights. I got to a point in my life where I was checking Google Flights more than my own social media (ask literally anyone who has had to work with or spend time with me). It allows you to play around with dates, destinations, and pricing to help you find the best deal. You&#8217;re able to see the history of the flight prices, the range in the current fares from low, normal, and high, the leg room, plane capabilities, and more. If you have a Google account, Google Flights will allow you to track pricing on flights you opt in on so you can watch as the price fluctuates over time to help you decide when to buy. Google Flights provides a plethora of incredible features, but my favourite has to be the Explore feature.</p>

<p>Through <a href="https://www.google.com/travel/explore?tfs=CBwQAxoaagwIAhIIL20vMDRqcGwSCjIwMjItMTItMjMaGhIKMjAyMi0xMi0yN3IMCAISCC9tLzA0anBscAKCAQsI____________AUABSAGYAQE&amp;tfu=GgA&amp;tcfs=UgRgAXgB" target="_blank" rel="noopener" title="">Google’s Explore feature</a>, you can choose your home airport and type in any broad destination you’re interested in, such as “Europe” or “Caribbean Sea”. You can then select the duration and time you’d like your trip to be, and Google will show you the lowest fares to popular destinations in your specified area. You can also use their map feature, which will show you the lowest fares from your home airport to destinations all over the world during your time frame. If you have the desire to travel and are open to suggestions, Google Flights will be your most helpful search engine every time.</p>



<p>For deals that require the least amount of work on your end (if you&#8217;re based in the states), I highly recommend signing up for emails from <a href="https://scottscheapflights.com/" target="_blank" rel="noopener" title="">Scott’s Cheap Flights</a>. The service is free to anyone with an email address and has taken me all across the world. All you have to do is sign up with your email and watch your for the alerts! Each email contains information for everything you need to know to purchase the ticket: the departure airports, the destination airports, and the estimated time left before the deal expires. In addition to the free subscription, they also offer premium and elite subscriptions that send deals at a higher frequency with lower fares (<a href="https://scottscheapflights.com/how-it-works?_ga=2.209425620.715975387.1670446024-790401852.1670446024" target="_blank" rel="noopener" title="">and more perks</a>). In one cheap flight with them, you&#8217;ll make back the money on your paid subscription by five. All subscriptions have access to mistake fares (my personal favourite). Scott&#8217;s also publishes <a href="https://scottscheapflights.com/guides?_ga=2.185390447.715975387.1670446024-790401852.1670446024" target="_blank" rel="noopener" title="">guides</a> that help educate you on how to travel affordably, and they&#8217;re always a gold mine. I love Scott&#8217;s so much that I kept my premium subscription even after I knew I was moving abroad, and still use it to send my friends incentives to come visit and stay up to date on going rates for international travel in the states so I know when I should go home. They&#8217;ve grown so much as a company since I started travelling, and I wholeheartedly believe this is the best investment you could make to enhance your travel life.</p>

<p>Once your tickets are purchased, your next job is to secure a place to stay. My two favourite ways to find a home away from home are <a href="https://www.booking.com/" target="_blank" rel="noopener" title="">Booking.com</a> and <a href="https://www.airbnb.com" target="_blank" rel="noopener" title="">Airbnb</a>. Depending on the city, sometimes staying in an Airbnb is more affordable than a hotel, and vice versa. If you’ve taken a spur of the moment trip and need a place to stay on short notice, I recommend the app Hotel Tonight. In an effort to fill up their rooms, hotels in contract with <a href="https://www.hoteltonight.com/" target="_blank" rel="noopener" title="">Hotel Tonight</a> provide special rates for users at discounted prices for last minute travelers, which is how I ended up staying at a $250 hotel for $80 on the Las Vegas Strip the summer of 2018, but that’s another story. They have a wonderful app, but also have a desktop version.</p>

<p>My best practices I&#8217;ve adopted over the years:</p>



<p><strong>Keep an open mind.</strong><br>The key to travelling cheap is keeping an open mind about where to go. Throughout my years of travelling, one of the most important things I’ve learned is to go with the flow. All it takes is one missed train to throw off an entire day of scheduled plans (from experience), so always be open to see where travelling can take you. We all have bucket list destinations, but don’t base the entirety of your travel plans on specific places; this can create a rigid structure without much wiggle room. There is so much of the world to see; if something strikes you, jump on it, even if you’ve never considered it before. My absolute favourite memories have come from the unexpected, so keep an open mind when choosing travel destinations. Let the deals take you to somewhere you’ve never dreamed of that will end up impacting your life forever. As crazy as it sounds, if you shop the deals correctly, you can find international flights for cheaper than a domestic flight! Going out of the country doesn’t seem like a thing you just do on the whim, but… why not?</p>

<p><strong>Be flexible.</strong><br>Some airports are better to fly out of than others, and that&#8217;s something that will never change. My home airport used to be RNO, where TSA took 5 minutes to get through, 15 max; needless to say there weren&#8217;t loads of cheap flights flowing through my little airport in Reno, Nevada. But, a short flight away, I had access to LAX, SFO, SMF, OAK, SEA, DEN, and more. If you catch a cheap flight from an airport a little further away, it&#8217;s absolutely worth looking into a connecting flight. Let&#8217;s say the cheap fare you find is from JFK to FCO, but you live in Houston (true story). Your flight is in 6 months, which means you have 6 months to sit and search for the perfect fare to NYC. Opening up your airport search options will open up your whole world, and can give you a little vacation before your vacation. I&#8217;ve done this on nearly every trip I&#8217;ve been on; it gives me the freedom to pay for the flight and start a search for cheaper connecting flights while I wait for my big trip. This is how I got my entire family to Rome for $456 total (four tickets) with a 12 hour stopover in NYC to do all the touristy things, spent my favourite Valentines night yet with a complimentary bottle champagne in a Kimpton hotel in Boston before a week in Ireland, and met up with my best friend in Munich for a coffee before setting off to Paris.<br><br></p>

<p><strong>Do your research.</strong><br>Make sure to do your research. Whether you’re headed to a foreign country or across state lines, educate yourself on the town and the trip prior to leaving. Spend time finding a great place to stay, taking into consideration the proximity to the sights you want to see, public transportation, and safety. In international situations, there’s a little more to think about. Look into the vaccines you need, where the best place for money exchange is, and how much money you’ll need for the entirety of your trip (factor in emergencies). Once you’ve researched enough to get a general feel of your destination, set a budget- for food, experiences, souvenirs, and getting around town. Take a look at excursions before you go. When traveling on a budget, you want to know that you’re getting the best deal for your money, and the best way to do that is to stay informed and well-researched. Be sure to check out sites on platforms like Google reviews and Trip Advisor to see what visitors and locals have to say about the best places to visit in town. I also utilise Pinterest any time I&#8217;m going to a new destination.</p>



<p>Something that has occurred to me in recent years is the concept of <a href="https://ecotourism.org/what-is-ecotourism/" target="_blank" rel="noopener" title="ecotourism">ecotourism</a>, defined as &#8220;a form of tourism involving responsible travel to natural areas, conserving the environment, and improving the well-being of the local people,&#8221;. This has become more and more important to me as I&#8217;ve grown, and especially after living in one of America&#8217;s top tourism destinations. It&#8217;s worth a thought to see how tourism effects the local population, how to ensure care for the natural areas your visiting, and more. <br><br><strong>Budget, but not TOO much.</strong><br>When figuring out your daily budget, make sure to give yourself leeway to enjoy your time travelling. As a person who revolves her life around budget travelling, I can honestly say that on the times I’ve obsessed over spending the least amount of money possible have ended up on my short list of regrets in my life (spoiler: it was mostly food, and a coffee cup from the gift shop at Musée d&#8217;Orsay). Don’t throw your budget out the window, but make sure you’ve allowed yourself enough money to enjoy yourself properly. The only thing you’ll regret more than spending too much money is missing out on experiences because you were too tight pocketed. Keep it within reason, but don’t forget you’re traveling for those new experiences.</p>

<p><strong>Don’t hesitate.</strong><br>If you think you’ve found a great deal, buy! the! tickets! If you see a good deal, take it! As great as it is to do some research beforehand, it can always be done after the tickets are bought. You don’t want to miss out on an opportunity because you hesitated and subsequently lost the low fare. What’s better than the adrenaline of diving into the unknown AND scoring a cheap ticket to somewhere you’ve never been?! I missed a low fare once and learned my lesson. Act first, plan later. Some tickets are also available much in advance; my ticket to Barcelona cost $185 and I had an entire year to plan for the trip.</p>

<p>Everyone is aware of Londoners&#8217; love of coffee. British people may be more known for their mugs of tea, but trust me when I say that London has a real coffee culture that is well worth discovering. </p>



<p>Coffee is a pure and unadulterated drink worth drinking. This becomes possible when you discover the perfect way to prepare your coffee. I never thought I&#8217;d write a post like this but , I decided to share the high quality, sustainable, and fair coffees. </p>



<p>Coffee items have found their way into the majority of people&#8217;s daily needs and also it is more than simply a need for some people.Best of all, many local coffee businesses sell their own particular mix of beans or ground coffee to go. That said, there&#8217;s nothing more enjoyable (at least for me) than hankering on down to a little London coffee shop.</p>



<p>In addition to, whether you want your coffee slow-dripped, ice-cold, or pink and Instagram-worthy (yes, really), London has a plethora of coffee shops to choose from. For those looking for new places to get their caffeine fix, or those ready to venture outside their usual haunt.</p>

<p>Recently, I&#8217;ve found that trendy vibes and a fashionable ambience pull me to coffee shops. They simply give me the idea that their coffee must be excellent. The fact that they actually serve decent coffee is what prompted me to visit this café in the heart of London.</p>



<p><a href="http://ooo-koffee.com/london.html" title="">Omotesando Koffee</a> began in Tokyo, Japan. Despite having to close down for a brief period in 2015, its popularity has never waned. They built an overseas branch in Hong Kong shortly after reopening in Tokyo, and they have already expanded all the way to London. Their concentration on every precise detail for preparing the ideal cup of coffee sets them apart from other coffee shops.</p>



<p>Combined with the spacious organic space and the scary-looking coffee machine, Omotesando Coffee is not to be underestimated and also their layout is very laboratory-like, with all personnel wearing lab coats and different flasks used to prepare your coffee. They feature an open coffee station where you can see their experienced baristas brew your drink step by step.</p>



<p>The establishment features modern Japanese pine architecture , a wide variety of single &#8211; origin beans, alternatives for cold brew , a lot of matcha, and one of Londons most excellent iced coffees : an iced cappuccino with bubble milk foam. </p>

<p><a href="https://flatwhitesoho.co.uk" title="">Flat White</a> in Soho opened in 2005, it is one of Londons first specialty coffee business, Flat White has been a Berwick Street fixture for years. When you&#8217;re wandering through this region of soho, it should, without a doubt , be your destination because it is constantly welcoming and busy. </p>



<p>I loved the location right away since it had a more classic Soho cafe vibe to it and lacked many of the trendy accents that appear to be standard in contemporary coffee shops. Their signature cup, the Flat White, is defined as &#8220;an antipode-style coffee served as a strong shot of espresso served in a small cup with textured milk.&#8221; Imagine a cappuccino with less foam and more espresso. Princi and Bar Italia, his Kiwis in Flat White are doing it right.</p>



<p>The coffees here are well-made, with silky milk and an almost flawless tongue feel. The beans are espresso-focused, and no syphon filter tea-like coffee infusion is taking place. This is unmistakably an espresso bar.The velvet here is made by foaming, swirling, and tapping the jug to perfection. It&#8217;s folded into the coffee in a soft pour that foregoes latte art in favour of tongue feel and well-blended milk. It comes highly recommended.</p>



<p>Flat White also serves a single origin espresso in addition to their house mix. If you&#8217;re new to coffee geekdom, pairing a single origin coffee with the house mix helps you to educate your taste.</p>

The coffee shop has a quaint, comfortable layout and top-notch furnishings. Additionally, to give it a truly Italian atmosphere, the walls are covered in black and white images of old Italy.</p>



<p>In 1949, Bar Italia originally opened its doors and since since has only provided the best coffee for its patrons.. Additionally, it asserts that their coffee is brewed with the greatest coffee makers available utilising a proprietary procedure. There are traditional expressos, creamy caffe lattes, and foamy cappuccinos available.</p>



<p>It is a tiny espresso bar that is about as traditional a place to get a cup of coffee as there is in all of London. There is a limited amount of seating, but they are typically open until 3am , making it deal for coffee dates, latecomers, partygoers, and musicians throughout the years and remains a key Soho hotspot today.</p>



<p>Despite the expensive rates, this is a true community café, catering to a sizable local number of Italians and somewhat snobby towards those who don&#8217;t know the vernacular or aren&#8217;t regulars.</p>

<p>For me (that&#8217;s my words not Allpress&#8217;s), Redchurch is the star of specialty coffee. Whenever you go to a place that offers allpress, you can have a solid cup of coffee.While it won&#8217;t excite everyone, it&#8217;s exactly what most of the specialty industries across the country need. </p>



<p>However, you can find their coffee in various locations throughout London. What makes this branch special is the spacious and secluded patio where you can admire the sun shining.</p>

<p class="has-small-font-size">Since London is one of the most popular tourist destinations in the world, it is not surprising that many students from around the world come to study here. After I had decided to pursue a Master&#8217;s, I considered whether I should stay at home in Germany or continue my studies in London. Normally I&#8217;m not the type to leave my comfort zone, but this time I decided to go for it &#8211; and suddenly I was on the move.</p>



<p class="has-text-align-left has-small-font-size">I don&#8217;t think there is any other city where you can go out as well as in London. It has the perfect mix of classic restaurants and funky ones. It has an abundance of restaurants, bars and clubs. From the moment I decided to go to London, I started saving all kinds of hotspots in my Google Maps and couldn&#8217;t wait to try them all. Knowing that I would only spend one year in London, it was clear to me that I wanted to live in Notting Hill. Who hasn&#8217;t watched the film and imagined living next to the blue door? The first big hassle was finding a place to live that wouldn&#8217;t cost an arm and a leg. But after I found a flat, the exploration could begin.</p>



<p class="has-small-font-size">We have all heard a lot about the usual things to do in London, such as visiting Buckingham Palace, Big Ben or Tower Bridge, and of course, you should visit all these attractions if you have never been to London. However, I hope that this blog will not give the usual tourist tips, but rather insights from a local student.</p>



<p class="has-small-font-size">The first chapter of my blog will be about <strong>Notting Hill</strong> &#8211; my new home. But I&#8217;ll be taking a closer look at the other neighbourhoods over the next few weeks, so stay tuned! </p>



<p class="has-small-font-size">Attracting&nbsp;millions of visitors every year to its rainbow-coloured&nbsp;houses and enviable gardens, Notting Hill is the perfect place to spend some time.&nbsp;</p>

<p>London is one of the best cities in the world to test all kinds of culinary expertise. All flavours from around the world are gathered in this city, but for now, I will give you an insight into my favourites in Notting Hill.</p>

<p class="has-small-font-size">The first thing in London that captivated me was how green the city is. A stroll across Hyde Park may be started or ended in Notting Hill.  You need about one to two hours for a walk through the whole park and the best part is that you see lots of dogs and squirrels. When you arrive, don&#8217;t stop walking &#8211; it&#8217;s the best way to see the beauty of Notting Hill!</p>

<p class="has-small-font-size"><strong>Portobello Road</strong> is one of the most famous streets in Notting Hill, especially because many tourists come to see the book store from the film. But it also offers so much more. It has a rich history dating back to the 19th century with millions of people visiting the market each year. Every weekend it is filled with stalls from the market offering everything you can imagine &#8211; clothes, antiques and and and&#8230;. Portobello Road is a wonderful spot to spend your time whether you just want to wander, people-watch, find a deal, or have a bite to eat.</p>

<p class="has-small-font-size">Super centrally located on Portobello Road is one of my favourite cinemas I have ever visited. The <a href="https://www.electriccinema.co.uk/" target="_blank" rel="noreferrer noopener"><strong>Electric Cinema</strong></a> is not the usual modern cinema we are so used to nowadays, but a more antique one, with only a small selection of films and big lounge chairs. At £25, it&#8217;s a slightly more expensive cinema, but you really do get a special experience for your money. Right next door is also the accompanying <a href="https://www.electricdiner.com/" target="_blank" rel="noreferrer noopener"><strong>Electric Diner</strong></a>. (Saving tip: Save 50% if you visit the cinema on the same day).</p>

<p class="has-small-font-size">I have never been a sporty type, however, going to a Pilates studio gets me to move. If you have a bit more time and stay in one of the local hotels, you should book an hour at <a href="https://weareheartcore.com/en-gb/" target="_blank" rel="noreferrer noopener"><strong>Heartcore</strong></a>. The studio offers Performer Pilates, which I&#8217;ve only ever known from Victoria&#8217;s Secret Angels in America. But it provides a super relaxing yet exhausting experience and is one of the nicest studios I know. I don&#8217;t think you will feel like exercising after walking around the city all day, but I didn&#8217;t want to miss this recommendation!</p>

<p class="has-large-font-size">RESTAURANTS</p>



<p class="has-small-font-size">Since I&#8217;m a student and London is very expensive, I mostly ate at home, but since my family and friends were visiting, we also tried a few restaurants. I have to say that my favourite restaurants are all more or less breakfast and lunch restaurants, so please let me know where you like to eat for dinner!</p>

<p><strong>Breakfast/Brunch</strong></p>



<p class="has-small-font-size"><a href="https://grangerandco.com/" target="_blank" rel="noreferrer noopener"><strong>Granger &amp; Co</strong></a> brings an Australian flair to Notting Hill and offers all-day dining, but specialises in breakfast and brunch. I recommend ordering scrambled eggs and pancakes! On weekends the restaurant gets very busy, but you have the option of being put on a waiting list and receiving a notification as soon as a table is available for you.</p>



<p class="has-small-font-size"><strong><a href="https://ottolenghi.co.uk/" target="_blank" rel="noreferrer noopener">Ottolenghi</a></strong> was founded in 2002 as a small shop in Notting Hill and can now be found several times in London. It is named after a British chef who has published several bestselling cookbooks. The shop serves breakfast, lunch and baked goods. It only offers takeaway food, which is super nice for a picnic in Hyde Park in the summer.</p>



<p><strong>Italian Food</strong></p>



<p class="has-small-font-size">My heart beats for Italian food. You can find the best pizza in London (approved by Italians!) at <a href="https://cinquecentopizzeria.com/" target="_blank" rel="noreferrer noopener"><strong>Cinque Cento</strong></a>, a super authentic place that offers Neapolitan pizzas. The founders came from Italy with the dream of building a truly authentic Neapolitan Pizzeria in the heart of the city &#8211; in my opinion, a success. </p>



<p><strong>Dessert</strong></p>



<p class="has-small-font-size">Follow your nose until you find the best cinnamon scent that will put you in the Christmas spirit even when it&#8217;s 40 degrees in summer. <strong><a href="https://www.bunsfromhome.com/" target="_blank" rel="noreferrer noopener">Buns from Home</a></strong> is a small bakery that creates cinnamon masterpieces you can break your diet for. Not only do they impress with their taste, but also with a cute pink shop &#8211; super instagrammable.</p>



<p><strong>Pub</strong></p>



<p class="has-small-font-size">A London travel guide without a pub recommendation? That would be strange. After walking around and eating all day, it&#8217;s nice to settle down for a drink at <strong><a href="https://www.cockandbottlew11.com/" target="_blank" rel="noreferrer noopener">Cock &amp; Bottle</a></strong>, one of the most charming and beautifully restored traditional pubs in West London. Every Tuesday they hold a pub quiz where you can win great prizes.</p>

<p class="has-small-font-size">If you have the chance, explore different parts of the city before deciding where to live &#8211; they definitely represent London&#8217;s diversity and each has its own atmosphere. Once you have decided on a district, you need to consider whether you want to live alone or with others. If you are looking for a flat, I recommend the app <strong><a href="https://www.rightmove.co.uk/" target="_blank" rel="noreferrer noopener">Rightmove</a></strong> and if you are looking for a flatmate <strong><a href="https://www.spareroom.co.uk/" target="_blank" rel="noreferrer noopener">Spareroom</a></strong> is a great platform!</p>



<p class="has-small-font-size"><strong>How to get around</strong></p>



<p class="has-small-font-size">There are several ways to get around in London. If you are new to London, I recommend walking as much as possible. As an inexpensive alternative, you can ride the bus. Even after a year, I still enjoy sitting at the front and touring the city.&nbsp;If you travel a lot, definitely check out the <a href="https://oyster.tfl.gov.uk/oyster/entry.do" target="_blank" rel="noreferrer noopener">Oyster Card</a>, which can save you quite a bit of money on monthly rates.</p>



<p class="has-small-font-size"><strong>How to pay</strong></p>



<p class="has-small-font-size">You really need a debit or credit card in London, the city is almost completely cashless. Most international people use either <strong><a href="https://www.revolut.com/" target="_blank" rel="noreferrer noopener">Revolut</a></strong> or <strong><a href="https://monzo.com/" target="_blank" rel="noreferrer noopener">Monzo</a></strong> as it is super easy (&amp; free!) to create an account. But beware, just tabbing your card everywhere makes spending money super quick and easy.</p>

<p class="has-small-font-size">Take advantage of the travel opportunities from London. Brighton is really quick to get to and is a great respite from the city. You can lie on the beach all day and eat fish and chips. But there is not only a lot to see within Great Britain, but also internationally. There is a train to Paris that only takes two hours &#8211; still crazy to me.</p>

										<content:encoded><![CDATA[<p>Long before the Europeans came to&nbsp;South America, Indigenous populations figured out how to cultivate an incredible array of plants. They developed elaborate irrigation systems&nbsp;and terraced the steep Andean mountain slopes to make them more suitable for growing food. They grew corn, lima beans, potatoes, sweet potatoes,&nbsp;chili peppers, avocados, peanuts, and chocolate. They also raised llamas and guinea pigs. Each region developed its own traditional dishes.</p>



<p>When the Europeans arrived, they incorporated some of these Indigenous peoples&#8217; dishes into their own cuisine. They took the new foods back to Europe, and they brought European livestock and foods to South America, such as pigs, chickens, citrus trees, wheat, almonds, cows, and goats.</p>



<p>The Europeans learned to make their favourite Spanish, Italian, and&nbsp;Portuguese&nbsp;dishes using local ingredients. Many traditional Indigenous cooking methods were adapted and modified, and the newly available foods from Europe were mixed in. Asian and African immigrants brought their culinary traditions as well. All of this blended to make this the diverse and exciting cuisine that exists today.</p>



<p>Some Indigenous foods were not incorporated into the European-style cuisine that dominates big cities like Buenos Aires and Santiago. But the Indigenous populations continue to cultivate and eat them. Recently, these foods have been gaining popularity. Chefs in trendy restaurants now showcase Andean products such as alpaca meat, grains like&nbsp;quinoa&nbsp;and&nbsp;kiwicha&nbsp;(also known as amaranth), and unusual tubers such as&nbsp;yucca&nbsp;and maca in sophisticated new ways.</p>



<p>As more South Americans venture north with their cooking traditions and ingredients in hand, North Americans are getting the chance to sample these new foods and flavours.&nbsp;<em>Nuevo Latino</em>&nbsp;cuisine, a fusion of traditional Latin flavours with global food trends, is one example of the global gastronomic exchange that&#8217;s happening today. The rest of the world has become interested in the cuisines of South America, and new combinations will emerge. But the time-honoured culinary traditions of Latin America remain intact. If you have not explored them already, new or old, don’t miss out. You will fall in love with South American food.</p>



<p>Now let’s find out how Marina and Marcio created Pop Skewer during lockdown to bring South American flavours to London.</p>

<p>Underneath the grey stretch of railway tracks in Wapping lies a surprise. Well, more than one, actually. Venture off the beaten path of Cable Street and you will find Brazil&#8217;s most popular street food on offer at Pop Skewer.</p>



<p>Succulent beef on sticks, halal chicken and sausage are freshly barbecued and served up on the side of the road, just like in South America.</p>



<p>The compact kiosk was opened by Brazilian couple Marina Simon, 46, and Marcio Yokota, 53, after they both lost their jobs during the first lockdown. They had never worked together, but decided to use their skills and take a chance on their new venture.</p>



<p>Marina said: &#8220;We were both doing something completely different before. I was working in property sales and then started temping because I knew I wanted to do something else but never thought of opening my own</p>



<p>&#8220;My husband was working in a coffee shop as manager but became ad lockdown we were bodh at home employed, so we said: &#8220;Why not work together?</p>



<p>&#8220;He&#8217;s a very good cook, so though we&#8217;d do something that uses his skills and gives people a taste of Brazil.”</p>



<p>They decided to serve the skewers with another popular dish from their home country rice and beans.</p>



<p>&#8220;In Brazil, they wouldn&#8217;t normally be served together, said Marina, &#8220;But we decided to combine them.”</p>



<p>“The skewers everywhere in Brazil. You grab them and eat them on the street really informally on the stick. They&#8217;re a really profitable business there and hopefully we will get the same success here”</p>



<p>They also serve up a Pop Sandwich and Pop Burger and daily specials like beef stew with cassava, beef stroganoff, beef parmigiana and, once a month slow-cooked beef ribs.</p>



<p>&#8220;Every Saturday we serve the feijoada, which is black bean and pork stew,&#8221; said Marina</p>



<p>It&#8217;s made with different types of pork meat served with rice, tomato salad, spring greens and the farofa, toasted cassava flour with bacon and something else. Forgive me, I forget as I&#8217;ve been a vegetarian for 20 years.&#8221;</p>



<p>A vegetarian running a meat based business? How does that?</p>



<p>&#8220;To be honest, I don&#8217;t like the smell of the BBQ, but I respect everyone whether they are vegetarian or not,&#8221; she said.</p>



<p>Marina admits she mostly stays away from the kitchen and sticks to handling other parts of the business. The couple buy all their food fresh every few days and have items like the black beans delivered from a Brazilian streets of London. supplier.</p>



<p>“I don&#8217;t cook anything, I&#8217;m terrible with that she said. &#8220;Of course, I help put the meals together, But cooking? No.&#8221;</p>



<p>Thanks to her, Pop Skewer also serves up plenty of vegetarian options, including a halloumi, onion and courgette skewer, a halloumi burger with courgette and lettuce, tomato and homemade sauce and a vegetarian sandwich in ciabatta bread. Marina said: &#8220;Coking with a charcoal grill makes such a difference to the taste.</p>



<p>&#8220;We have never just aimed to target Brazilians and, so far everyone is enjoying eating it. which we find amazing.</p>

<p>It&#8217;s not the first time the Bromley residents have taken a leap into the unknown. Marina, who is of Italian heritage and grew up in Minas Gerais, left Brazil in her 20s on a one-way ticket to London.</p>



<p>She said: &#8220;My first job was working in silver service in hotels I was terrible. Then I started in retail sales and the management and then property sales&#8221;</p>



<p>Marcio, who is of Japanese heritage and grew up in Sae Paule, arrived in England 15 years ago. He left behind a clothes business and found work in restaurants and coffee shops</p>



<p>Having grown up 370 miles apart, it took them both travelling 3,900 miles across the Atlantic for their love story to begin on the</p>



<p>&#8220;We met through a mutual friend and have been together ever since,&#8221; said Marina.</p>



<p>Their relationship is being put to the test with the challenges presented by their joint venture.</p>



<p>They built the business in just eight weeks launching just after the first lockdown, and have faced struggles with supplies during the pandemic, getting word out to customers on a shoestring, and working together in very close quarters</p>



<p>Sometimes I want to strangle my husband said Marina &#8220;But we have separates with me in the front taking orders and the other two guys in the cooking area. Sometimes we do bump into each other and bicker.</p>



<p>“It&#8217;s been very challenging having our own business under these conditions for the past year but I&#8217;m really enjoying it.”</p>



<p>They have also taken on fellow Brazilian Lucas Montagnini and trained him up to work on the grill.</p>



<p>&#8220;It was very hard to find someone because of the pandemic, said Marina &#8220;He was a friend of a friend who was an engineer in Brazil, but he&#8217;d had enough and decided to leave and do something else. That&#8217;s what we all do when we come to England something completely different It&#8217;s great and challenging, leaving our comfort zone.”</p>



<p>The Pop Skewer site was empty. before they took it over and they rely on Instagram, Google and word of mouth to gain customers.</p>



<p>But business can be unpredictable, with the lunch crowed sometimes arriving at 11am and sometimes not until 1.30pm, which makes it hard to plan.</p>



<p>&#8220;It can be really unpredictable,&#8221; said Marina. &#8220;We are not just building up Pop Skewer but also the location. The residents kept us going during the pandemic, but now the office workers are coming back. Hopefully, when the weather gets warmer, there will be lots of BBQ for everyone.</p>



<p>&#8220;We really want Pop Skewer to grow and get more customers. The past year has been about working hard and not getting much money, so we really want presented by their joint venture. to move to the next level now and become known by everyone for Brazilian food.”</p>

This is my personal go-to spot on those days I’m craving something quick, healthy and delicious. Their lunch menu is seasonal and varies daily, so you can frequent the café without getting bored with their food. Their lunch box comes with a main and 3 salads for under £10. You can have the lunch box to-go or dine in. The café is beautifully decorated with ornate vintage furniture and has its own little garden. I highly recommend their mixed roasted vegetables, which are a must-have when I visit. This place is a hidden gem frequented by regulars from nearby offices.
